Healthier Lunch Meals
What we eat does matter! There are a lot of days where we would just rather order something already made. Cooking can really be better in the long run though. Not sure of a meal plan you can go through with? That’s okay. Like many other things, it takes time to figure out. So here are some suggestions for healthier lunch meals.
Chicken & Broccoli Rice
This is a fairly easy recipe. To cook brown rice here are some simple guidelines to follow along with a video.
- First boil water, typically you will want to do a 1:2 ratio with the rice to water. Brown rice should be boiled in plenty of water so the more the better. Rinse rice thoroughly.
- Once the water is boiling, add a bit of olive oil, lemon juice, and salt. Now add in your cup of brown rice.
- Cover with lid and let rice boil for 20 minutes.
- Next drain the water and your brown rice should be finished.
Cook chicken to your liking and steam broccoli for about five minutes. Now that your brown rice is done go ahead and add in your cooked chicken breast and steamed broccoli.
Now that you have your brown rice ready and made, it’s just a matter of putting these ingredients together. Lay your wheat wrap flat on a plate and spread some refried beans. Here’s a video on how to cook refried beans quick and easy.
Next add about 2-3 tablespoons of cooked brown rice. Cut the cooked chicken breast into strips adding it on top of the brown rice. Have the tomato, lettuce, and cheese chopped to desired size. Layer on top and enjoy!
Shrimp & Avocado Wrap
For each wrap you’ll want about 6-8 cooked shrimps. While that’s being cooked, slice the avocado, and cucumber into thin slices. After the shrimp is done, spread some greek yogurt on the bottom of the whole wheat wrap. Next layer the avocado and cucumber slices on top. Squeeze lemon juice and add garlic/salt to taste.
Add fresh, rinsed lettuce in a bowl. After cooking your turkey breast, cut turkey breast into slices to put on top. Hard boil one egg and cut it up as well. Add in tomato and cheese to mix together into the salad.
